Aunt Selma’s Oriental Coleslaw

 

Coleslaw:

2 pkgs. coleslaw mix

6 oz. sliced almonds

1 c. sunflower seeds

3 scallions, sliced finely

2 large cans Mandarin oranges,

halved

2 pkgs. Ramen noodles, crushed

 


Dressing:

1/3 c. white vinegar

3/4 c. sugar

1/2 c. Canola oil

3 Tbsp. sesame oil

2 pkgs. Ramen seasoning

 


Combine dressing ingredients and mix well. Combine the slaw mix, almonds, sunflower seeds, scallions, and orange pieces in a large bowl and mix well. Add dressing and mix well. Just before serving add the dressing and the crushed Ramen noodles. (If the package of noodles has sat around for a while they may be hard, in which case it’s better to add the dressing a couple of hours before serving.)

Note: This makes an enormous quantity. I halve it and it’s still a gracious plenty for a good-sized family. Aunt Selma took it to the theater group dinner at the end of the season so there it was feeding a crowd.
